Don’t throw away those watermelon rinds…marinate them!!!  Here is a recipe I made up on the fly. (I have it in grams too)
•Watermelon rinds- about 2 lbs or 4qts green skin cut off, cut into about ½ inch by 2 inch pieces (I like to keep some of the fruit attached for better flavor)
•Water- 1quart
•Whole star anise- 4each
•Whole Coriander seeds- ½ Tbsp
•Whole anise seed- ½ Tbsp
•Whole black pepper- 1 Tbsp
•Sea or kosher salt (not iodized)- 3 Tbsp
•White sugar- 3 Tbsp
•White balsamic vinegar- ¼ C + 2 Tbsp 

Method:
Combine all ingredients except rinds and star anise in a non reactive pot such as stainless steel or enameled cast iron. Bring to a simmer on medium heat. Simmer for 10 minutes. In the mean time, place rinds and star anise in glass bowl or jars (non reactive and not plastic).  Through a strainer, pour hot brine onto rinds so they are completely submerged. Allow to cool at room temp. Cover tightly and refrigerate. For better flavor let sit for a few days. 
Eat alone or cut up and add to salads or add into summer slaws. Be creative. No rules with marinated rinds. Have fun. #astoria #watermelon #recipe #food #summer
