Heading home. I know you all don’t find these pictures as interesting as the food photos but I like posting them anyways. #nyc #uber #summer

I was able to find wild caught Carolina shrimp. They are in season right now. These shrimp are good enough to eat alone but Im lightly marinating them with fresh parsley, tarragon, a touch of thyme, scallion tops, lemon zest, crushed garlic & extra virgin olive oil.
I won’t eat farm raised shrimp and don’t expect the people eating my food to eat it either. It may cost a bit more but it actually tastes like shrimp and not mud…or nothing. You are also supporting American shrimpers, which sadly are a dying breed. #shrimp #seasonal #seafood #situationmarination #food

Meat on a stick, grilling during the summer, this makes me very happy…and I’m drinking a beer. #capecod #summer #food #grilling #meat

My family wanted spinach-artichoke dip as a snack for cocktail hour before dinner; so I made it for them. #capecod #summer #pregame #dip #snack #food

Watching the very first episode of The French Chef with Julia Child. She made Boeuf Bourguignon which aired on February 11, 1963. Her cookbooks and TV shows opened a lot of American’s eyes to cooking. She was a culinary trail blazer. #OG #cooking #bonappetit

Don’t throw away those watermelon rinds…marinate them!!! Here is a recipe I made up on the fly. (I have it in grams too)
•Watermelon rinds- about 2 lbs or 4qts green skin cut off, cut into about ½ inch by 2 inch pieces (I like to keep some of the fruit attached for better flavor)
•Water- 1quart
•Whole star anise- 4each
•Whole Coriander seeds- ½ Tbsp
•Whole anise seed- ½ Tbsp
•Whole black pepper- 1 Tbsp
•Sea or kosher salt (not iodized)- 3 Tbsp
•White sugar- 3 Tbsp
•White balsamic vinegar- ¼ C + 2 Tbsp

Method:
Combine all ingredients except rinds and star anise in a non reactive pot such as stainless steel or enameled cast iron. Bring to a simmer on medium heat. Simmer for 10 minutes. In the mean time, place rinds and star anise in glass bowl or jars (non reactive and not plastic). Through a strainer, pour hot brine onto rinds so they are completely submerged. Allow to cool at room temp. Cover tightly and refrigerate. For better flavor let sit for a few days.
Eat alone or cut up and add to salads or add into summer slaws. Be creative. No rules with marinated rinds. Have fun. #astoria #watermelon #recipe #food #summer
